Turkey Taco Lettuce Boats with Corn Salsa

This is one of my favorite “go to” dinners. It is quick, easy and a healthy spin on my favorite cuisine… Mexican!

I made a turkey taco lettuce boats with corn salsa… Delicious and easy!

I used 1lb of lean ground turkey, homemade taco seasoning (or you could get the reduced sodium prepackaged seasoning at the store), grape tomatoes, shredded Mexican cheese and hearts of romaine lettuce.

Cook the turkey on the stove over medium/medium high heat until brown. Add the seasoning and a little bit of water so it gets absorbed into the meat. (I would follow the direction of the seasoning packet for the proper seasoning to water ratio).

All that is left is to make your taco! Scoop your desired amount of meat into the romaine heart, and top with whatever you’d like! I used tomatoes, cheese, cilantro and avocado!

I also made a delicious corn salsa to compliment the taco boat. The beauty of this side dish, no real recipe required. Just throw in the Mexican flavors you love and it is sure to be tasty!

Ingredients I used: 1 bag of frozen corn (I like sweet corn), 1 red onion, cilantro, jalapeño pepper, lime and I decided to throw in some extra ingredients at the end!  image.jpgHeat the corn according to the package, diced the onion and jalapeño, and pick off as much cilantro as you’d like! Put it all in a bowl, mix in the juice from the lime and season with salt and pepper. Mix and enjoy! image.jpg

When I was mixing the corn salsa, I added my left over avocado to add another element.  image.jpg

And then, I added some of the left over grape tomatoes too! Like a said, throw in whatever you’d like!
End result… A quick, filling dinner without all the calories of going out for Mexican!
