Lemon Farro Salad
Summer is the perfect time for easy, chilled salads! Daniel and I are trying to save money and eat in as much as possible, so I have been trying to throw things together that are in our pantry and need to be used. I am always looking for ways to change up our meals, whether it be the protein, the veggies, the seasoning or the starch. I bought this farro a few weeks ago thinking it would be a great way to try something fun since I don’t use it often. It did not disappoint! I tossed together this salad and served it chilled. I also used lemon white balsamic which added some great flavor– definitely worth trying! I love a chilled salad with a hot protein. Summer Cookout with Beatriz Ball
Happy summer, friends!! {Or almost summer to us here in the northeast} Y’all know I enjoy sharing recipes and putting a healthier spin on things, but I also LOVE to set the table and have dinner parties! It’s probably the southerner in me, but even in our small, one-bedroom NYC apartment, I try to host and set the table whenever I can. It honestly brings me joy!
Living in NYC has been an adjustment, for sure. Even after 3 years, I still miss things from home in Alabama and one of those things is cooking out. We don’t have backyards in the city, or even front yards for that matter, but we DO have rooftops! Daniel recently bought a {tiny, rooftop-sized} grill for us to use on the roof and we have had several cookouts already. When Beatriz Ball reached out to partner with me, I was first thrilled because I already use and love their pieces!! And second, I thought a summer grill out would be so fun with their collection. I just love how their pieces can be used for a nice dinner party or to add some elegance to an outdoor BBQ!! I think this mix of nice and casual is perfect for the season! Homemade Salsa
Y’all know I love all things Mexican. So why I haven’t made my own salsa before? I have no idea!! I live off salsa and avocados. It might be a problem, actually. There is this restaurant in my hometown of Enterprise, Alabama, that has the greatest salsa!!! Anytime my sisters and I go home someone will go pick up a pint {or two} of it so we can eat it all weekend. No lie. That salsa is far above anything you can find in a store. Trust me, I think I have tried every salsa out there. Finally, it hit me to make my own and I must say, this is the closest I have come to THAT salsa. Even Daniel kept saying how good it was. The good thing about it is that it gets better as it sits. The flavors blend and it is heaven on a chip! I have been taking it every day with my lunch to work. And then snacking on it when I get home. All you do is throw everything in a food processors and BAM, salsa! Plus, it’s easy to enjoy knowing all the ingredients are fresh. Vegetable Beef Soup
My Granddaddy is known for his vegetable beef soup! Growing up, I couldn’t get enough!! Even when I went to college, he would make it in bulk and freeze it for me to take back to school. Man, it’s the best! Now, this isn’t his recipe, but he definitely is the inspiration behind it. As y’all know, I am ALL about using what is already in the pantry. I try to keep vegetables stocked up at home {canned or frozen} because they make it so easy to throw something together that is nutritious. I had some left over ground beef –from making spicy cranberry meatballs for our Christmas Party {see more about that here} and I wanted to use it before it went bad. {FYI, I made this recipe back in December, but am just now posting it! So the beef was just two days old, not two months! haha}. I threw in whatever I could find in my cabinets/fridge that I needed to use. That is the great thing about soups– you can really throw in whatever you have and it turns out great!! This soup hit the spot. It is a blizzard today in NYC and I am craving this soup, which is was led me to post it today. I just want to stay at home, bundle up on the couch and eat this soup!! Take a look…
Turkey Sweet Potato Skillet
Daniel and I had such a nice, relaxing weekend! We went to a concert with friends, grabbed dinner with a buddy, went to Target, read my book, enjoyed time at church and shopped around. It was the perfect combination of fun and relaxation! We typically stay in on Sunday nights, so I always love to try new recipes. I had some ground turkey in the freezer, so I wanted to make something that would allow me to use it. This dish was inspired by Primavera Kitchen and is so good!! Usually, ground turkey can be bland in taste, but I think using a flavored olive oil helped bring it to life! I was pleasantly surprised at just how flavorful this dish turned out. AND it is healthy and super easy to make!! We will definitely be making it again– but next time, I may use even more sweet potatoes!
